Spicy Pumpkin Soup
Ingredients
- 1 tbsp olive oil
- 1 each onion diced
- 1 clove garlic
- 1 red chili
- 500 grams pumpkin or butternut squash
- 750 ml vegetable stock
- 1 small tin coconut milk
- coriander
Instructions
- Gently fry onion, garlic and chilli until soft but not browned.
- Add pumpkin/ squash and stock and bring to the boil and simmer until soft.
- Allow to cool slightly then blend.
- Return to pan with coconut milk and chopped coriander and heat through.
- Serve with a sprinkle of coriander.
