Parsley Salad

Ingredients
- 1 bunch flat leaf parsley separate leaves from stalks
- 1 clove garlic crushed with a pinch of salt
- 8 anchovies chopped
- 1 tablespoon capers soaked in water for 20 minutes, then drained and squeezed dry
- 8 sun-dried tomatoes chopped
- 1 red onion chopped
- 1 tablespoon balsamic vinegar
- 3 tablespoons olive oil
- sea salt
- freshly ground black pepper

- Put all the ingredients in a bowl and toss together well
