Jerusalem Artichoke, Spinach and Goat's Cheese Tart

Ingredients
- 1 tablespoon olive oil
- 6-8 Jerusalem Artichokes
- 1 small bunch spinach
- 1 clove garlic
- 100 grams goat's cheese
- 1 egg
- 1/4 cup cream
- 1 sheet puff pastry
- salt and black pepper
Instructions
- Scrub the artichokes and boil for 10-15 minutes until just soft. Cool then slice.
- Gently cook the garlic and spinach in the olive oil until wilted.
- Allow to cool, then add the egg and cream and mix thoroughly. Season with salt and black pepper.
- Score the pastry 1cm from the edge and prick the middle. Cook at 180'C for 10 minutes.
- Spread the artichokes over the pastry, top with the spinach mixture and finally the goat's cheese.
- Cook for 30 minutes or until golden brown.
