Jerusalem Artichoke, Spinach and Goat's Cheese Tart

  1. Scrub the artichokes and boil for 10-15 minutes until just soft. Cool then slice.
  2. Gently cook the garlic and spinach in the olive oil until wilted.
  3. Allow to cool, then add the egg and cream and mix thoroughly. Season with salt and black pepper.
  4. Score the pastry 1cm from the edge and prick the middle. Cook at 180'C for 10 minutes.
  5. Spread the artichokes over the pastry, top with the spinach mixture and finally the goat's cheese.
  6. Cook for 30 minutes or until golden brown.
