Jerusalem Artichoke Soup

Ingredients
- 1 tablespoon olive oil
- 1 onion chopped
- 500 grams Jerusalem Artichokes scrubbed and sliced
- 800 ml vegetable stock
- 100 ml cream
- Salt and Freshly Ground Black Pepper
Instructions
- Heat the oil in a large pan, add the onion and fry gently for 5 minutes.
- Add the artichokes and stock, bring to the boil and simmer for 20 minutes or until the artichokes are tender.
- Blend until smooth, reheat, season to taste and stir in the cream.
