  1. Heat the oil in a large pan, add the onion and fry gently for 5 minutes.
  2. Add the artichokes and stock, bring to the boil and simmer for 20 minutes or until the artichokes are tender.
  3. Blend until smooth, reheat, season to taste and stir in the cream.
