Jerusalem Artichoke Frying Pan Gratin

Ingredients
- 25 grams butter
- 1 tablespoon olive oil
- 1 onion chopped
- 500 grams Jerusalem Artichokes scrubbed and sliced
- handful Thyme sprigs (leaves only) chopped
- 4 tablespoons Creme Fraiche
- 1 cup tasty cheese
- Salt and Freshly Ground Black Pepper
Instructions
- Heat the butter and oil in a large frying pan, add the onions and fry over medium heat for about 10 minutes until softened and starting to brown.
- Add the sliced artichokes and thyme, season with salt and black pepper. Pour in 100ml water (you could add a little stock paste here) and bring to a simmer. Reduce heat and cover with lid.
- Simmer gently for about 20 minutes, stirring occasionally until the artichokes are nice and tender, adding a little more water if necessary.
- Remove lid and simmer to reduce liquid to a thick glaze.
- Preheat the grill to high. Dollop Creme Fraiche over the artichokes, sprinkle the cheese on top and grill until golden and bubbling. Serve immediately.
