Jerusalem Artichoke Frying Pan Gratin

  1. Heat the butter and oil in a large frying pan, add the onions and fry over medium heat for about 10 minutes until softened and starting to brown.
  2. Add the sliced artichokes and thyme, season with salt and black pepper. Pour in 100ml water (you could add a little stock paste here) and bring to a simmer. Reduce heat and cover with lid.
  3. Simmer gently for about 20 minutes, stirring occasionally until the artichokes are nice and tender, adding a little more water if necessary.
  4. Remove lid and simmer to reduce liquid to a thick glaze.
  5. Preheat the grill to high. Dollop Creme Fraiche over the artichokes, sprinkle the cheese on top and grill until golden and bubbling. Serve immediately.
