Delicious as an accompaniment to a meal, or just as a snack. Contains Zucchini, Eggs, Pepper, Polenta, Parmesan Cheese, Salt and Garlic Powder.
Hot Zucchini Chips
Servings 8 people

Cook Time 20 minutes
Ingredients
- 2 eggs
- pepper
- 3/4 cup polenta
- 3/4 cup Parmesan cheese finely grated
- 1 teaspoon salt
- 1 1/2 teaspoon garlic powder
- 500 grams zucchini cut into quarters or sixths, lengthwise
Instructions
- Preheat oven to 220'C
- Line a baking tray with baking paper.
- Lightly whisk eggs in a shallow bowl and season with pepper.
- Combine polenta, Parmesan, salt and garlic powder in a second shallow bowl.
- Trim ends from zucchini, cut into quarters or sixths lengthwise depending on size.
- Dip each piece into egg, then toss in polenta mixture to coat.
- Place on tray and bake for 15-20 minutes or until golden.
- Serve with aioli if desired.
