Hot Zucchini Chips

Delicious as an accompaniment to a meal, or just as a snack. Contains Zucchini, Eggs, Pepper, Polenta, Parmesan Cheese, Salt and Garlic Powder.

Hot Zucchini Chips

Servings 8 people
Prep Time 10 minutes
Cook Time 20 minutes



  1. Preheat oven to 220'C
  2. Line a baking tray with baking paper.
  3. Lightly whisk eggs in a shallow bowl and season with pepper.
  4. Combine polenta, Parmesan, salt and garlic powder in a second shallow bowl.
  5. Trim ends from zucchini, cut into quarters or sixths lengthwise depending on size.
  6. Dip each piece into egg, then toss in polenta mixture to coat.
  7. Place on tray and bake for 15-20 minutes or until golden.
  8. Serve with aioli if desired.
