Herby, Nutty Noodle Salad

Servings 4 people
Ingredients
- 75 grams unsalted roasted peanuts
- 200 grams fine egg or rice noodles
- 150 grams French beans
- 1/2 cucumber
- 6 spring onions
- small bunch Thai basil
- small bunch mint
- small bunch coriander
Dressing
- 2 tablespoons rice vinegar
- 1 lime (grated zest and juice)
- 1 red chilli finely chopped
- 1 garlic clove finely chopped
- 1 teaspoon soft brown sugar
- 1 teaspoon toasted sesame oil
- 1/2 teaspoon soy sauce
Instructions
- Whisk all the dressing ingredients in a large bowl.
- Cook the noodles, drain and rinse under the cold tap. Add to the dressing, toss well to coat then leave to cool.
- Cook the beans for 3-5 minutes drain and refresh in cold water.
- Halve the cucumber and thinly slice. Cut spring onions diagonally.
- Toss the cooked noodles with the other ingredients and herbs.
