12 May Say hello to spaghetti squash
We first heard about spaghetti squash a couple of years ago when our daughter was given one and raved about it. So we bought some seed and grew some.
We had to consult chef Google about cooking it and now it’s a favourite of ours.
To cook it, cut it in half lengthwise and scoop out the seeds.
Place cut side down on a baking tray and cook at 190 degrees celsius for about 30 minutes or until the skin gives when prodded.
Allow to cool a little, then fork out the ‘spaghetti’
You can now top with your favourite pasta sauce or dress with butter and herbs as a side dish.
We use it in place of glass noodles in Thai style soups, stir fries and spring rolls.
