  1. In a large bowl whisk together orange and lemon juice, soy sauce, sesame oil, chilli, lemongrass and ginger.
  2. Bring a saucepan of water to simmer and poach the chicken for 5-7 minutes until tender. Drain and shred into the bowl of dressing.
  3. Bring a large pot of salted water to the boil, add the noodles and mushrooms and cook for 3 minutes. Add pak choi and broccoli and cook for 1 or 2 minutes or until the noodles are al dente.
  4. Drain the noodles and vegetables and add to the bowl with chicken and dressing. Toss gently to combine and serve sprinkled with coriander.
