Bacon, Broad Bean and Asparagus Salad with Crispy Croutons

Ingredients
- 4 rashers good quality bacon
- 200 grams broad beans podded
- 200 grams asparagus
- 2 slices thick cut bread cubed
- 100 grams mixed salad leaves
Instructions
- Fry the bacon in a dry frying pan until crisp, remove from pan and set aside to cool
- In the same pan, fry the croutons adding some olive oil, if needed, until they are crisp and golden
- Blanch the broad beans and asparagus for 3 minutes, then refresh with cold water
- Top the washed salad leaves with the other ingredients and drizzle with your favourite dressing
